Just got home…it’s been a LONG day!
As I wrote earlier, I was up and in the kitchen bakin’ some muffins this morning.
And I was a bit nervous they wouldn’t go over well…but my classmates liked them! 🙂
I added a ton of blueberries. Here’s a shot of the one I sampled.

I had a business-y meeting over lunch and felt awk taking a picture but I got a delish in a dish Cashew Chicken Salad from Mission American Kitchen. It was just Nappa lettuce, cashew, water chestnuts, tomatoes, and some crunchies. I got the peanut-dressing on the side. It was HUGE too! I ate most of the lettuce/chicken/cashews but left the crunchies, tomatoes, and water chestnuts behind. Wasn’t a fan.
Some clementines were enjoyed during our trial ad prep. And in my afternoon class I enjoyed a delicious homemade cupcake. I threw in the towel yesterday. Sue me. I’ll be good from now until Easter…promise!
