So remember when I said I was attempting to bring some sunshine into this dreary day by choosing yellow dishware for breakfast?
Well, the morning was sort of sunny! But now the afternoon is cloudy. My plan sort of worked! 🙂
Lunch: Christy’s wrap + strawberries
As I prepped lunch, I snacked on some more edamame…
I steamed them this time…
And then Christy’s wrap! I called this dish “Christy’s wrap” because my friend Christy told me about it! She makes this dish all the time.
In the mix
- La Tortilla Company whole wheat tortilla (Christy usually uses a lavish roll-up)
- 2 tbsp hummus
- 1 Dr. Praeger’s California veggie burger (TJ’s sells them!)
Step 1: I broiled my veggie burger for 8 minutes on each side. Turned out MUCH better than last night’s grilled version!
Step 2: I slathered the hummus on the wrap, threw a handful of spinach on top of it, and cut up my veggie burger into four slices
Then rolled it on up and ate it!

I also had some strawberries on the side. I tried to pick out all the ones that looked like they only had a day or so left…I still have a ton more left!
This evening, my friend Ben and I are going to attempt a swimming workout. I did a little bit of cardio this morning but I didn’t feel like I got a GREAT workout. Plus, I haven’t been in a pool is God knows how long. Probs since August!
