Good Morning!

Good morning! Happy Thursday!

I woke up bright-eyed and bushy-tailed and got ready for work in record time. 🙂

Since I had a few extra minutes I decided to make a fun breakfast!

Oatmeal pancakes! I switched back to the original recipe as opposed to this recipe.

In the mix

  • 1/4 cup quick oats
  • 1/4 cup whole wheat flour
  • 1 tsp organic honey
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp vanilla
  • 1 egg white
  • 1/4 cup + splash of skim milk
  • 1/2 cup mixed frozen blueberries and raspberries


After (with some sugar-free syrup)

Great start to my Thursday!

Off to work! I’m suppppper sore after yesterday’s workouts! But it’s all good. 🙂 I’ll probably keep it pretty simps at the gym tonight and do some light cardio. Tomorrow I have 30 min spin + Nate’s class!
