One more for good measure

My sweet tooth always hits around 8:00. Even if I’m super full from dinner I still crave something sweet. Weird?

I purposely do not buy sweet things, like cookies or candy, because they’ll be gone in like a week 2 days.

Tonight I wanted something sweet and didn’t want to leave my place to go pick something up. After perusing the internet and reading some blogs, I decided to try these cookies. Thanks to Julie over at Peanut Butter Fingers for trying it out first! 😉

Sugar-Free and Flourless Chocolate Oatmeal Cluster Cookies

I made some substitutions to this recipe.

In the mix

  • 1 cup Mult Grain hot cereal (combo of rye, barley, oats, and wheat)
  • 1/4 cup sugar, 1/4 cup splenda
  • 2 egg whites
  • 1.5 tsp vanilla
  • 4 tbsp cocoa powder
  • 1/4 cup applesauce
  • pinch of salt

I combined everything together. Oopsie. Apparently you are supposed to first combine the wet and dry ingredients separately then mix them together. I didn’t do that.

I let the batter chill for about 1.5 hours.

Then I baked the cookies at 350 degrees for 11 minutes.

They were good–for what they are! They tasted healthy, you know what I mean? I’m sure they would be a lot better if I followed the original recipe. However, my sweet tooth was satisfied but they also weren’t so sweet that I wanted to eat the whole batch. I was content with 2. 😉
