Giant cookies staring me in the face

A large platter of these were staring me down when I walked into PR this afternoon.

My friend Rob snagged one and requested I take a picture for the blog. Even though I really wanted one I just had lunch and knew I wasn’t hungry…so I didn’t take one. Soon they were gone…sigh.

For lunch today, I took my own suggestion from last night’s dinner and used it in today’s lunch! I re-heated leftover southwestern chicken salad and made some Flatout crackers.

I cut up a Flatout into little pieces and baked them at 350 degrees for 10 minutes. I also sprinkled some taco seasoning on them prior to putting them in the oven.

I sprayed Pam on the foil to prevent sticking.

The crackers/chips were pretty crunchy and I would def make them again sometime. I recommend putting some type of seasoning on them…otherwise I think they’d be a bit bland.

I also had an apple with some peanut(flour) butter. The apple was suppppper crisp and crunchy.

This is by far the best combo I’ve tried using the peanut flour mixture. It also stuck really well to the apple. I usually struggle keeping the almond butter or peanut butter on the apple if I dip the apple into the almond/peanut butter. Not the case with the peanut(flour) butter!

I have an Evidence midterm tomorrow. 😦 You all know how I’m going to be spending the evening…
