Darby, please stop peeing on my floor when I leave you home alone out of the kennel.

Seriously? So, I feel bad leaving Darby in the kennel for more than 2 hours. However, EVERY TIME I leave him out of the kennel and I leave, he pees on the floor! I took him out right before I left for class today and I was gone an hour and a half. And? He peed on the floor.

Busy day today…lunch was quick because I had to be in court with my mentor at 2. It was pretty much a repeat of yesterday (boring) but I added a bowl of chili to the mix!

That’s right, I didn’t even use a plate. 🙂

Snack was another repeat: almond butter + banana sandwich. This is a pretty hefty snack but I’ve been so busy during the mornings that I’ve been skipping my morning snack…I need fuel for the race coming up! 🙂

I started dinner this morning…2 frozen chicken breasts and a container of chicken stock. I put it all in the crock pot, set it to low, and went to work! I ended up using the whole container of chicken stock…so the chicken breasts were eventually all the way under the broth.

When I got home from class, I started sweet potato fries. First I sliced them.

Then I put some foil on a cookie sheet, sprayed the foil with Pam, laid the sweet potato discs on the foil, sprayed the discs with Pam, and sprinkled them with salt and cinnamon.

I set the broiler to high and put the timer on 8 minutes. After 8 minutes I flipped the sweet potatoes and cooked them for about 6 minutes on the other side.

At about the 4 minute mark (opposite side cooking), I took out the chicken and shredded it with a fork.

I then took a portion, put it into a little dish, and added 1.5 tbsp of BBQ sauce. I put the rest of the chicken in a Tupperware container to save for leftovers!

By this time my sweet potatoes were done and my bun was done toasting. I got some spinach to top my sandwich + .5 tbsp of BBQ sauce. I use Stubs BBQ Sauce.

It all came together quite nicely!

I’m STUFFED 🙂 I wish I could just go to sleep; however, Federal Jurisdiction is calling my name.
